Grass is greener on the other side...

In an attempt to be healthier I opted for a chicken salad for dinner. I used mint from my garden and liberated a lemon from the neighbour's overhanging lemon tree (sssshhhh!) to make the dressing. I didn't think W would be down with a salad so made him a chicken breast parcel filled with bacon and cheese, then wrapped in puff pastry.

So which dinner would you pick? My vote is the chicken parcel with the molten cheese filling. :( Stupid diet.

Nasi Lemak

This is my interpretation of Nasi Lemak. Mum and Dad said it was ok so I am pleased as it is my first attempt at this dish. I made authentic coconut rice with the pandan and everything. However I got a bit lazy with the sambal and I cheated with a canned sauce. I jazzed the sambal up with fresh prawns which I peeled and deveined. Very gross procedure but worth it coz Mum liked it. I also made a chicken curry and served up some left over beef rendang. The side dishes were fried anchovies, egg, cucumber and fried peanuts.

Slow Cooked BBQ Pulled Pork

I found this recipe online and one of the ingredients caught my eye; root beer! I used a 1kg shoulder pork roast, a can of A&W Root Beer and half a bottle of Bull's Eye bbq sauce. Cooked the root beer and meat on low for 6 hours (skin side down) then drained and shredded the meat. Mix in BBQ sauce and serve on bread rolls. Make sure you don't trim the fat off the meat coz it's essential to keep the meat from ending up too dry.

Thin Crust Pizza

I call it the Suebie Special. It's a thin crust pizza with bacon, mushroom, beef mince, pizza sauce, bbq sauce, rosemary, thyme and my secret ingredient..... KFC Hot and Spicy Chicken. I used the new pizza stone the wonderful Christine bought us for Xmas and cheated a bit with a premade Aldo's pizza base. The pizza was crispy and it wasn't greasy at all in spite of the mound of mozarella I piled on top. I attribute this to the stone.

I've just had a wonderful thought.... dessert pizza? :)

Herb Garden update

Somehow I've managed to kill off 90% of the pet grass. Too much sun I think. Gonna germinate some more from seeds and have another go. The chilli has one flower! Woohoo! That means fruit (ie chillis) soon right? On a sad note, my capsicum keeps on falling to one side. I think he's trying to give up!? Argh. Gardening is hard.

Herb Garden

I started a herb garden today. Why herbs you ask? Well, not only are they easy and "Sueproof" to grow they smell lovely and at the end you can eat them. I planted a Jalepeno chilli, mint, rosemary, thyme and an orange capsicum. I decided on these seedlings because I often use the first 4 in cooking and the last one would probably look pretty. Oh I also started a small pot of pet grass. I hope the cats like it.
